Everyone Loves Deviled Eggs!Posted by Rachel at

It's true. Everyone DOES love deviled eggs. But, only when they are good! I have tried some terrible examples in the past. For me, there is nothing worse than deviled eggs made with Miracle Whip (or some equivalently sweet salad dressing). Wait. There is something worse. Deviled eggs made with 'pickle juice'. First of all, for the record, there is no such thing as 'pickle juice'. 'Pickle juice' refers to the brine that is used for pickling. It is not juice. And, second of all, please do not cook with it. Up until now, I didn't really have a trusted recipe for deviled eggs. Of course, I had my Grandma's recipe and my Aunt's recipe ... but they've been making them for years and neither has a "real" recipe ... one on paper, that is. My mom gave me this one, and it's a little different than the traditional mayo and mustard idea. She found it on a calendar somewhere in the Bahamas ... 6 hard-boiled eggs Slice the eggs in half lengthwise and remove the yolks to a separate bowl. Using a food processor, puree the yolks, mayonnaise, lime juice, horseradish, hot sauce, salt and pepper. Fill each halved egg white with the pureed yolk mixture. Garnish with finely chopped chives and a sprinkling of paprika. NOTE: I used about 5 drops of Frank's Red Hot sauce. The resulting eggs were quite mild. If you like things hot, you will definitely want to add more. But, I always hesitate to make food too hot when cooking for a group. Curse me and my non-enjoyment of mayonnaise.. These sound good.. Could the mayonnaise be replaced by anything? Maybe that marshmallow whip stuff, or vanilla icing? Mashed potato?

You can find recipes that do not use mayonnaise. Some use ranch salad dressing, for example. But, I do not endorse the salad dressing substitution! By the way ... some people have even been know to put BACON in their deviled eggs. That's just for you Paul. :P

I must say these are delicious Rachel. And I would recommend "pickle juice" when mixing the perfect Caesar. But not just any "pickle juice", jalapeno-asparagus or jalapeno-string bean "pickle juice". Mmmm, spicy booze.
